My ex-in-laws are Norwegian. Lutefisk and lefse every Christmas kind of Norwegian. Plus, I grew up in a small town Lutheran church. So even though I'm not Norwegian, I am familiar with Syttende Mai, or, Norwegian Constitution Day. It's Thursday, May 17th. (Syttende Mai)

In Norway, you'll find parades, formal clothing, celebrations and food. I was surprised to hear they eat ice cream and hot dogs after the parade. In fact, it's the biggest day for ice cream sales in Norway all year long!  I wonder if they wrap the hot dogs in lefse?

Will you be celebrating this week?
