It appears that we’re going to see a chance to snow this week, and we’ll be feeling the more seasonable November weather that Minnesota is accustomed to.

For some people the change in the weather really has no impact on their schedule and plans, but for others, the normal routine can be thrown out the window.  

No matter which of these categories you fall into, this might be a recipe that will fit whatever you have to do this week.  

It was almost like the folks at Taste of Home knew we were going to have winter weather when they dropped this Crock Pot recipe in my inbox.  

Being able to put something on to cook that doesn’t require you to keep a close eye on it so you can do other things is nice especially when the weather is dicey.

This is Slow Cooker Beef Stew.

Here’s what you need to get started. 

1 ½ pounds potatoes peeled and cubed 

6 medium carrots, cut into 1-inch lengths 

1 medium onion, coarsely chopped 

3 celery ribs, coarsely chopped 

3 tablespoons of all-purpose flour 

1 ½ pounds beef stew meat cut into 1-inch cubes 

3 tablespoons of canola oil 

1 14 ½ oz. Can of undrained diced tomatoes  

1 14 ½ oz. Can of beef broth 

1 teaspoon ground mustard 

½ teaspoon salt 

½ teaspoon pepper 

½ teaspoon dried thyme 

**OPTIONAL** 

½ teaspoon browning sauce 

Minced fresh thyme 

Directions: 

Layer the vegetables in a 5 qt. Slow cooker.  

Take the flour and put it in a large shallow dish and then take the meat and coat each piece with the flour. 

Take the coated meat and brown it in a skillet. It is suggested that you do this in small batches, then place the stew beef over the vegetables. 

Then take the salt, pepper, mustard, tomatoes, and thyme and mix together in a large bowl and then pour over the meat and vegetables.  

Place all the ingredients in the slow cooker and let it cook for 7 to 8 hours. 

You’ve got time to all the other things you want or need to do before you settle in to enjoy your meal.
