At my house, we happen to have two picky eaters. My kids Wyatt, age 4, and Harper, 7, they are huge fans of banana bread but not pumpkin pie. I found a recipe recently for pumpkin bread. I wasn't going to even bother making it, thinking my kids are too picky and won't like it, and I would end up eating it all by myself. I finally broke down and gave it a whirl. To my surprise, my kids loved it!

We loved this bread. It barely lasted a day at our house. It was moist, great flavor, and even better with soft butter. Great autumn recipe. I am looking forward to making this recipe again. It makes three loafs of bread, so one for home, one for work, and one for a family get together.  This would be a great thing to bring to a Thanksgiving family get together.

Best Pumpkin Bread Recipe:

  • 1 cup of vegetable oil
  • 4 eggs beaten
  • 2/3 cup water
  • 2 cups canned pumpkin
  • 3 1/3 cups sifted flour
  • 1 1/2 tsp salt
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • 3 cups of sugar
  • 1/2 cup each raisins and chopped pecans (optional)

Preheat oven to 350 degrees. Grease and flour 3 medium loaf pans. Combine oil, eggs, water and pumpkin. Sift together flour, salt, nutmeg, cinnamon, soda and sugar. Make a well in center, add pumpkin mixture and blend until moist.

Stir in raisins, pecans and/or chocolate.Skipped all the extras and it was yummy plain. Bake for about 1 hour or until  toothpick inserted in the center comes out clean. Cool in pans on a rack for 15 minutes, remove from pans and cool on rack for 30 minutes. Wrap separately in plastic wrap and cool completely.
