I love apples. I eat one almost every day, sometimes two a day. If you’re like me, or you know someone who is, this recipe I found will be a good one for the fall and winter months.

Taste of Home has a Butterscotch Apple Cake that sounds really good. And the good thing is the time it takes to prepare, and bake it aren’t all that long. 

The outline says the prep time is around twenty minutes, and you’ll need to bake it for around fifty-five minutes or so. 

Here’s what you’ll need for this tasty treat: 

2 Cups of Sugar 

1 cup of canola oil 

3 large eggs, room temperature 

1 teaspoon of vanilla extract 

2 ½ cups of all-purpose flour 

2 teaspoons baking powder 

1 teaspoon baking soda 

1 teaspoon salt 

1 teaspoon ground cinnamon 

4 medium tart apples totaling 4 cups (peeled and chopped) 

1 Cup of pecans 

1 package of butterscotch chips (11 ounces) 

Now here’s how you put it all together: 

Place the eggs, vanilla and oil in a large bowl and beat those ingredients until they are blended really well. In another bowl, combine the flour, baking soda, baking powder, cinnamon and salt then beat slowly into the sugar mixture in the other bowl.  

Make sure the ingredients from the second bowl are blended well with the sugar mixture from bowl one.  

Once everything has been mixed together, slightly grease a 13 x 9 baking dish. Preheat your oven to 325 and while it’s warming up don’t forget to put butterscotch chips on the top as well.  

Bake for 55-60 minutes. Here is an important step, cover the dish for the last 15 minutes so it doesn’t get too brown.  

This recipe could be a great option if you are looking for something different to serve around the holidays, or to just enjoy on the cold winter days we know are coming our way.
